Instructions
Bring a large pot of salted water to a boil. Cook the pasta according to the box directions.
Heat oil and butter in a large skillet on medium heat.
Saute the garlic until it starts to soften.
Add the broth and shrimp.
Cook until the shrimp is cooked through. It will turn pink and opaque.
Add the lemon juice and the cooked pasta and mix well.
Served topped with the parmesan cheese.
Notes
If you want to add a little heat to the dish, add some red pepper flakes when you soften the garlic.I prefer fettuccine because it is a more substantial pasta, but you can use any pasta you prefer. If you do not have a good source of fresh seafood, frozen shrimp work really well in this recipe. You will just need to thaw them the day before you want to make the scampi.
