Shrimp Scampi Pasta on a red plate

Shrimp Scampi pasta is a great option for a special occasion meal when you do not want to spend a lot of money. Each serving is under $3 and you can serve it with some garlic bread and an inexpensive salad.

Instructions

  • Bring a large pot of salted water to a boil. Cook the pasta according to the box directions.
  • Heat oil and butter in a large skillet on medium heat.
  • Saute the garlic until it starts to soften.
  • Add the broth and shrimp.
  • Cook until the shrimp is cooked through. It will turn pink and opaque.
  • Add the lemon juice and the cooked pasta and mix well.
  • Served topped with the parmesan cheese.

Notes

If you want to add a little heat to the dish, add some red pepper flakes when you soften the garlic.
I prefer fettuccine because it is a more substantial pasta, but you can use any pasta you prefer. 
If you do not have a good source of fresh seafood, frozen shrimp work really well in this recipe. You will just need to thaw them the day before you want to make the scampi.
