Sausage Cheddar Egg Bake in a glass casserole dish

This easy to prepare Sausage Cheddar Egg Bake makes a great weekend breakfast and at $0.78 per serving it is super budget friendly. There are a variety of additions you can make to this casserole a complete meal. Your family will love this as the main dish for a breakfast for dinner meal.

Variations

  • Add a bag of baby spinach to get a serving of vegeatbles into the meal.
  • Replace the sausage with 1 1/2 pounds of diced ham.
  • Cook and crumble 1/2 pound of bacon and use it to repace 1 pound of the sausage.
  • Use one pound of hot sausauge to get a little kick. If you don’t have hot sausgae just add some crushed red pepper flakes. 
  • Change the cheese to pepper jack or mozzarella for a diffferent flavor.
  • If your family really does not like seasoned meat such as sausage, ham or bacon, you can substitue ground beef, chicken or turkey. The dish will have a much milder flavor but would be good topped with salsa or some chopped fresh herbs.

Serving and Storage

  • Use this as a main dish for a breakfast for dinner meal.
  • It freezes well so wrap individual portions and put them in the freezer. Take one out the night before to thaw and heat it in the microwave in the morning for a quick breakfast.
  • Make it up ahead of time. You can make it the day before, just cover the mixing bowl and store it in the refrigerator. If you do this, add a few minutes onto the cooking time.

Ingredients

  • 2 lb sausage (cooked, drained and crumbled)
  • 12 eggs
  • ¼ cup milk
  • ½ cup light sour cream
  • 2 cups cheddar cheese
  • 1 tsp salt

Instructions

  • Preheat your oven to 350℉.
  • Cook the sausage and drain it well. Allow it to cool.
  • In a large mixing bowl combine the eggs, milk and sour cream. Mix until well combined.
  • Stir in 1 cup of cheese and the sausage.
  • Pour this mixture into a greased 9x13 casserole dish and top with the remaining cheese.
  • Bake at 350℉ for 45 minutes, or until the top is light brown and the casserole is just barely jiggly. You are looking for the eggs to be cooked through and set up.
