Blackening seasoning varies in flavor and heat intensity. I use Zatarain’s because I like the flavor. It is a little milder which is great because I’m not always a fan of super spicy food. I just add more when I do want to bring on the heat. Find a brand with the flavor you like and then learn how much to add for your taste buds. If you get a different brand the next time you may find that you need to use a different amount for the same result.

- ⅓ pound chicken breast (sliced into thin strips)
- 1 tsp blackening seasoning (or to taste)
- 2 tsp vegetable oil
- 1 clove garlic (minced)
- 1 ounce cream cheese (softened and cut into small pieces)
- ⅓ cup milk
- ½ bell pepper (any color)
- ¼ cup parmesan cheese (grated)
- 3 oz linguine

Instructions
- Put a pot of salted water on high heat.
- Mix the blackening seasoning with the chicken and set aside. Be sure to wash your hands.
- Once the water boils, put the pasta in and cook according to the box directions. Drain well.
- Heat the oil in a large skillet and sauté the garlic and bell pepper until they are soft.
- Add the seasoned chicken and sauté until the chicken is completely cooked.
- Add the cream cheese and milk and stir until completely melted.
- Add in the parmesan cheese and pasta and mix well.
