- 1 lbs stew beef
- 2 leeks (cleaned and sliced into 1/4 inch thick rings)
- 2 cloves minced garlic
- 1 tbsp vegetable oil
- 4 stalks celery diced
- 2 large carrots diced
- 1 medium onion diced
- 48 oz beef broth
- 1 can petite diced tomatoes
- ¾ c barley

Instructions
- Brown the stew meat in a soup pot with the vegetable oil.
- Remove the beef with a slotted spoon and saute the garlic, leeks, onions and carrots until they are soft.
- Put all of the ingredients into the pot and bring to a simmer.
