Instant Pot Chicken Fried Rice

Chicken Fried Rice made in the Instant Pot costs $1.48 per serving. The cost breakdown is below the recipe. You can double the rice (and the broth) and add more vegetables to have an entire meal for less than $2.00 per serving. If you do not have an Instant Pot, see the notes for directions on how to prepare the dish without it. This recipe is easy to double and is very freezer friendly. Make a bigger batch and freeze some for another night.

Serving Suggestions

Although you can add extra vegetables to this dish to make it a complete meal, you can also serve this fried rice with a simple salad with Ginger Dressing.

FAQ about IP Chicken Fried Rice

You can cube the chicken and store it in the refrigerator for several days or freeze it for several months. If you freeze it, take it out the night before you are going to use it so that it can thaw in the refrigerator.

Once prepared, you can package and store the Chicken Fried Rice in your freezer for later use. 

Sautee the garlic in the vegetable oil until it is soft. Add the chicken and cook until it is cooked through. Add the vegetables during the last few minutes so that they can thaw and start to cook. While you are cooking the chicken, prepare the rice using the chicken broth. Add the cooked rice, soy sauce and sesame oil to the chicken and vegetables. Cook until the vegetables are done, stirring often.

Ingredients

  • 2 tb vegetable oil
  • 1 tsp sesame oil (optional)
  • 1 pound boneless skinless chicken breast (cubed)
  • 1 cup uncooked white rice
  • 2 cloves garlic (minced)
  • 2 c chicken broth
  • ¼ c reduced sodium soy sauce
  • 28 oz bag frozen mixed vegetables

Instructions

  • Add all of the ingredients, except the vegetables, to the Instant Pot in the order listed.
  • Cook on high for 3 minutes and use an instant release
  • While the rice is cooking, heat the vegetables in the microwave.
  • Once the rice is cooked, mix the vegetables into the pot and serve.

Notes

The sesame oil is optional but it really adds a lot of flavor to this dish.
You can use vegetable broth or water in place of the chicken broth.
You should use whatever vegetables your family will eat. I use a mix with green beans and corn and then throw in some peas. If your family will eat broccoli and carrots those will also work really well in this dish.
If you do not have an Instant Pot, cook the rice with the chicken broth by whatever method works for you.  Sautee the chicken and garlic in a large skillet or wok with a tablespoon of the vegetable oil and the sesame oil. Heat the vegetables. Once everything is ready, mix all of the ingredients together in the pan with the chicken.
