Yellow Rice
- 8 oz package of yellow rice (or buy in bulk to save more)
- ⅔ c frozen peas
- 2 c chicken broth

Instructions
- Preheat your oven to 375.
- Heat the broth on the stove or in the microwave
- Mix the olive oil, cumin, paprika, garlic powder and salt and rub it onto the chicken.
- In a 9x13 casserole dish mix the rice, hot broth and peas.
- Place the chicken on top and cover tightly with foil.
- Bake for 30 minutes and then remove the foil.
- Bake for an additional 30 minutes until the rice is done and the chicken is cooked through.
Notes
If you want to make your own yellow rice use 1 cup of basmati rice, 1/2 tbsp tumeric and 1 tbsp of lemon juice. Mix everything together and follow the directions as written.
Spraying or brushing some extra oil on top of the chicken once you have uncovered it will make it a little extra crispy.
